The Penny Bun Bakehouse – Our ‘local food hero’ for November

We’re lucky at The Waveney Inn to work with some fantastic local food suppliers from Norfolk and Suffolk, such as our local food hero of the month, The Penny Bun Bakehouse, who supply our bread.

The Bakehouse, run by former top chef Johnny Spillings, opened in 2010 and now has over 60 wholesale customers across Norfolk and Suffolk ranging from pubs and restaurants to cafes and deli’s.

Before becoming a baker Johnny spent 12 years working as a chef in Michelin star kitchens across the country. His love for bread and patisserie was discovered whilst working for Raymond Blanc at Le Manoir aux Quat’Saisons.

The Bakehouse team consists of three bakers, John Spillings, Andy Howes and Darren Copeman, as well as Ian on deliveries.  The team take the time to lovingly and craft all their breads and baked goods – for instance, their Sourdough takes up to 48hrs to make from scratch.

Every second Saturday of the month a large selection of Penny Bun Bakehouse treats can be found at Halesworth Produce Market.

This summer The Penny Bun Bakehouse collaborated with Raymond Blanc, providing a selection of bread and scones for Jardin Blanc at the RHS Chelsea Flower Show, his Long Table Banquet at Wilderness Festival, and numerous prestigious race days at Royal Ascot.


Johnny’s daughter Savannah Rae was born in May this year and she’s already getting in on the baking action! She’ll be shaping baguettes before she can walk!


The Bakehouse has also collaborated with the local brewer Barrell and Sellers to develop a beer bread Sourdough using their Brown Ale. For this year’s Aldeburgh Food and Drink Festival, Barrell and Sellers brewed a limited edition Bread ’n’ Bitter using surplus Penny Bun bread.

And this summer the Penny Bun Bakehouse launched a new project called Lickety Ice, producing handmade ice lollies that are bursting with seasonal flavours and packed full of delicious natural ingredients. Look out for them next summer!

New restaurant & function room opens at the Waveney Inn

You asked, we listened, and we built it! Our new restaurant and function room extension is open at the Waveney Inn, so if you live near Beccles or in south Norfolk and you’re planning a night out with friends, or a celebration with a large group, get in touch to book your table.

We regularly receive booking enquiries for larger dining parties of 8 or more and for private functions, but haven’t always been able to accommodate them. With our new extension, there’s now plenty of room as the space comfortably holds up to 100 people, making it ideal for small weddings, parties and business conferences, outside of the holiday season. When the weather’s good, guests can also relax outside in the enclosed sunken courtyard garden.

The extension is part of our continual commitment to improve our customer experience. Our holiday business is growing and the new room helps service the increased demand from people staying on site, plus an increasing number of day visitors who have found what a fantastic place it is to come and have lunch by the river.

For corporate events, our large 60″ flat screen TV is ideal for presentations and we can tailor a package to suit your needs, including refreshments, breakfast, lunch or dinner for your delegates.

If you’d like us to provide food for your party/function, we have a range of buffet options to suit all tastes, from just £5.95 per head.

Our family-friendly pub and restaurant is the Broads premier waterside destination pub. It features an air-conditioned bar and restaurant, huge outdoor deck overlooking the beautiful Carlton Marshes nature reserve and a mouth-watering menu of locally-sourced, home-cooked food, Adnams ales and a wide selection of other drinks.
